Best extra virgin olive oil — how to choose

What makes EVO “best”?

The best olive oil is not one bottle that wins every ranking. It is extra virgin olive oil (EVO) that matches your kitchen’s taste and use — fresh, cold-pressed, with clear olive character.

From a cook’s point of view, four things matter:

  1. Grade. Only extra virgin — mechanically extracted olive juice, not refined. Generic “olive oil” ≠ EVO.
  2. Freshness. Open one bottle at a time; keep it cool and dark. Stale oil loses aroma — “best” becomes average.
  3. Intensity. Bitterness, pepper and herb notes vary by cultivar. Coratina, Peranzana and Oliana give a practical scale: robust → medium → mild.
  4. Use. Salad and finishing often want a livelier oil; light frying and kids often prefer softer. Heat detail: olive oil for frying. Background on benefits: olive oil benefits.

In Estonia people search parim oliiviõli, ekstra neitsioliiviõli, extra virgin olive oil and kvaliteetne oliiviõli — commercial intent: how to choose, not which chain. Below we compare attributes (intensity, cold-pressed, EE kitchen), not retailer brands.

Intensity scale: Coratina · Peranzana · Oliana

Good EVO is not “sweet oil.” Bitterness and a light pepper tickle are usually signs of lively cold-pressed oil — not a fault. Use the scale to find your kitchen’s level:

Cultivar Intensity Taste / feel Works well for
Coratina High / robust Green olive, artichoke, clear bitterness and throat pepper Grilled veg, tomato, beans, fish, finishing pasta
Peranzana Medium Balanced: herb, almond, moderate pepper Everyday pan, salad, stewing — “one bottle for most things”
Oliana Mild / soft Gentle olive, less bitterness, smoother mouthfeel Bread, kids, baking, soft salads when robust feels too much

Tallinn weeknight practice. If you want Mediterranean “bite,” start with Coratina or Peranzana. If the household prefers softer — Oliana or a similar mild EVO, and keep a smaller robust bottle for finishing.

You do not need every Italian cultivar memorised. Ask: do I want the oil to show up on the plate, or melt into the background? That is “best” for you.

Cold-pressed / extra virgin checklist

Before you buy — a short list for quality olive oil / cold-pressed olive oil:

  • Label says extra virgin / ekstra neitsi (not only “olive oil” or “pure”).
  • Cold-pressed / mechanical extraction — aroma and character survive.
  • Unrefined — not stripped chemically bland.
  • Origin / region or cultivar mentioned (sets expectation: robust vs mild).
  • Dark bottle or tin — protects from light.
  • Open one pack at a time; do not stockpile open bottles in warm light.

If you searched which olive oil is best, answer with the checklist + intensity scale — not price or logo alone. Cheap refined oil can be neutral for the pan, but it is not what people expect from EVO.

How to choose for an Estonian kitchen

Estonian cooking (including Tallinn) is practical: onions, roots, eggs, fish, pasta, salad — mostly light to medium heat.

  1. One main bottle. A Peranzana-style medium EVO covers salad, stewing and light frying. See olive oil for frying when heat is the question.
  2. Optional finishing bottle. Coratina-style robust drizzle on tomato, grill, beans — restores aroma after heating.
  3. Mild option. Oliana-style if the household prefers less bitterness or you bake with oil.
  4. Size. Smaller bottle = fresher cycle; larger (e.g. 3–5 L) works if you use it quickly and store well. Do not open several at once.
  5. No medical miracle. EVO is food — benefits background: olive oil benefits.
